Roasted Shaved Brussel Sprouts with Balsamic Dressing

Roasted Shaved Brussel Sprouts with Balsalmic Dressing mixed with apple, walnuts and fresh lemon juice. This makes for a perfect side dish fro dinner or your holiday table.

Equipment

Ingredients

  • 2 lbs Brussel Sprouts
  • 1/3 cup balsamic vinegar
  • 1 tbsp maple syrup
  • 2 tsp Dijon Mustard
  • red pepper flakes, pinch optional
  • 1/2 cup walnuts, chopped
  • 2 apple, chopped about 2 cups
  • 1 tbsp Fresh lemon juice about half a lemon
  • salt and pepper to taste

Instructions

  • Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
  • Rinse and trim the end of the Brussel sprouts. Using a food processor with slicing blade add in the Brussel sprouts.
  • If you want to use a knife instead of food processor. Trim the end of the Brussel sprouts and thinly slice the Brussel sprouts.
  • Add the shaved Brussel sprouts to a bowl.

The Balsamic Dressing

  • To a small bowl add in the balsamic vinegar, Dijon mustard and maple syrup and red pepper flakes and whisk together.

Assemble the Dish

  • To the bowl with Brussel sprouts mix in the Balsamic Dressing and mix together.
  • Add the dressed shaved Brussel Sprouts to a lined baking sheet and spread evenly on the baking pan. Salt and pepper to taste (Optional). Roast in the oven for about 10 minutes.
  • Remove the Brussel sprouts from the oven and add to a bowl. Add in the chopped apples and walnuts and mix together. Squeeze in some fresh lemon juice and mix together. Salt and pepper to taste (Optional).
    Ready to serve.
