Looking for something a little lighter to make for dinner? Winter Kale Salad mixed with Turmeric Almond Butter Dressing is so delicious and stays good for couple of days in the refrigerator. The salad is mixed kale, apples, red onions, quinoa and cucumbers mixed with tahini dressing.
Kale sometimes gets a bad wrap for being too bitter or hard to chew. The trick to having kale in a salad is to massage the greens before eating to break the kale down so it is easier to chew. You can use salad dressing, fresh lemon juice or avocado and massage the kale leaves until they begin to soften.
After the kale is massaged you can add in the rest of the ingredients to your salad or veggie bowl. Give it a try and you will see a difference!
Kale winter salad is great for meal prepping or for lunch because the kale can really hold up. Leave in the refrigerator for about 3 days.
You know what surprised me about this salad is how good red onions and apples taste together. Who new? The flavors balance each other sweetness of the apple mixed with the sharpness often red onion.
Turmeric Almond Butter dressing.
This kale salad is delicious when mixed with Turmeric Almond Butter Dressing. This dressing has a lot of flavor and healthy ingredients like turmeric, ginger, garlic and a little maple syrup. The flavors balance well with kale, apples, and red onion.

Ingredients for the Winter Kale Salad:
- Kale
- Quinoa
- Red Onion
- Apple
- Cucumber
- Sprouts
- Turmeric Almond Butter Dressing

Directions:
- Remove the stem from the kale and roughly chop the kale. Squeeze some fresh lemon and massage the kale with lemon juice.
- Chop the veggies into bite size pieces and mince the red onion.
- Mix in the cooked quinoa, diced red onions, sliced apples, cucumber, sprouts and mix the salad together.
- Dress the salad with a couple table spoons of the Turmeric Almond Butter Dressing and mix together. You could also use any other salad dressing of choice.
- Ready to serve or refrigerate.
This salad can last up to 3 days in the refrigerator with the dressing added. Without the dressing added it may last longer.
