That was me yesterday but I did have a few of staple ingredients to make a healthy, delicious and quick dinner. I thought I would share a quick video on how I prepared dinner last night in under 15 minutes for 4 people.
For me, being prepared in advance makes all the differerence in what I decide to eat. Especially if time is an issue.
I don’t always cook with a recipe. I tend to make dinner with whatever I have in the refrigerator. That is why I like to make sure I have the staple ingredients that I need for the week so it is easy to cook. It makes it very easy for me to cook healthy food in a short amount of time with some simple ingredients.
Spinach Tomato Black Beans and Brown Rice:
Cooking Time: 10 Minutes
- 2 cups dice tomatoes
- 2 tbsp Tamari
- 1 can black beans (drained and rinsed)
- 3 cups of spinach
- 3 cups cooked brown rice
- ½ cup water
Large pan and medium heat. Allow the pan to heat up. Add diced tomatoes and stir for about a minute.
If the tomatoes begin to stick add ¼ cup of water and allow to sizzle.
Add brown rice and stir. Add a little water if the rice sticks.
Add spinach and beans and stir. If at any point the food begins to stick, add a little water. Add tamari and stir.
Continue to cook and stir for 2-3 minutes until the spinach is wilted. Serve as main dish or as a side dish. Refrigerate the leftovers.

P.S. This is a great dish for leftovers. One of the reasons I love leftovers is because it is easy to eat at home and not go out to eat.
