One of my favorite meals as a kid was Pancakes! My dad would make them from scratch on Saturday mornings… and still does with my kids. My kids love them as well; plain, blueberry, or even with chocolate chips!
I have discovered a way to make simple healthy pancakes with 3 simple ingredients that are beneficial for your health and ingredients you probably have in your home. The 3 ingredients are rolled oats, bananas and nut milk. So simple easy and quick for a healthy breakfast

This Happens to be Healthy Because:
Rolled oats are packed with fiber and are blood sugar friendly. Oatmeal contains protein and is slow digesting and creates that feeling of fullness. Banana are a great replacements for eggs as a binder in baking because they are low in calories and contain soluble fiber which can help lower cholesterol.
Ingredients:
Servings 4
- 1 Cup Rolled Oats
- 2 Medium Bananas
- 1 Cup Nut Milk (Almond Milk is what I use)
- Optional Additions: Pinch of cinnamon, blueberries or chocolate chips
Directions:
Place all the ingredients in a high powder blender like a Vitamix. Pulse until blended. Blend for about 30-60 seconds.
Turn on griddle or pan to medium heat. If you would like, you can spray some oil before pouring the batter.
As, an option, you can go oil-free. Make sure the pan is hot before you pour the batter to prevent sticking.
Pour equal amounts of batter, 3 inch pancakes and wait for them to begin to bubble and flip to the other side to cook evenly. When finished you can plate and add some maple syrup!
