I wanted to share with you this Roasted Sweet Potato Quinoa Kale Bowl. Veggie Bowls all about combining your favorite ingredients. If you don’t like one ingredient, switch it out for another.

Basics Ingredients for a Veggie Bowl:

Grains (Quinoa, Rice,Barley, Buckwheat, Oats)
-
Greens (Raw/Steamed/Sautéed)
-
Veggies (Raw/Steamed/Sautéed)
-
Beans/tofu/tempeh
-
Dressing or sauce. (Squeeze of lemon)
If you batch cook or meal prep, you can easily make a quick delicious bowl in a short amount of time.
For this bowl below, I roasted sweet potatoes, brussel sprouts and made quinoa. Then topped with red onion, avocado and balsamic dijon dressing. Then mixed in some sautéed kale.
Other options: use raw kale or steamed, any type of potatoes, swap out brussel sprouts for asparagus or any veggie you like. You can also add in some beans.
Some people have a hard time digesting raw veggies like kale so you can always steam or sauté the kale in some water (I did this for this bowl).

Roasted Sweet Potatoes Quinoa Kale Bowl
Serves 4
Ingredients:

2 Sweet Potatoes
-
1 Pound Brussel Sprouts
-
2 Cups kale
-
1 cup uncooked quinoa
-
1/2 cup chopped red onion
-
1/4 cup water
Directions:

Preheat oven to 400 degrees. Chop the sweet potatoes in small cubes (about 1inch cubes). Halve the the brussel sprouts.

Line a baking sheet with parchment paper and place the sweet potatoes and brussel sprouts on two separate pans. Roast the sweet potatoes for 40 minutes and the brussel sprouts for 25-30 minutes. Both at 400 degrees and toss half way through.

Cook quinoa using package instructions.

Sauté the kale in water (about 1/4 cup water )

Option: Dice up half avocado and red onions.
Balsamic Vinaigrette
Ingredients:

1/4 cup Balsamic Vinegar
-
1 tsp Dijon Mustard
-
1tbsp Maple Syrup (Substitute Date paste or other sweetener of choice)

1 tbsp chia seeds
Directions:
Add all the ingredients into a bowl and mix ingredients together.
Once the veggies and quinoa are cooked. You can create your bowl. In a bowl, add in quinoa, kale, brussel sprouts, sweet potatoes and top with onions and avocado and dressing.
