Lentils and walnut taco sauce is so simple and versatile for a hearty quick meal. The lentil and walnut taco can be used for a burrito, taco, or used for a bowl to make mealtime easy. Packed with flavor from the spices.
This was made with no oil and in an Instant Pot. I sautéd the onions and garlic in the Instant Pot with no oil and used vegetable broth instead.
(If you don’t have an Instant Pot ,you can make the dish in a pot on the stove. But you would have to stir more often and the lentils may take longer to cook around 45 minutes)
Ingredients:
- 1 cup green lentils
- 1 cup Walnuts chopped
- 1 yellow onion diced
- 2 garlics diced
- 4 cups vegetable broth
- 1 15.5 oz can diced tomatoes
- 1 tbsp chili powder
- 1 tbsp onion powder
- 1/2 tsp cumin
Directions:
Set the Instant Pot to sauté. Add a drop of water and listen for the sizzle to make the sure the pot is hot enough. Add the onions and stir. Add a little broth if the onions stick (about a table spoon). Sauté for a 1-2 minutes. Add garlic and stir for 1 minute. Add a little broth if needed.
Add the the chili powder, onion powder, cumin and stir. Add the lentils, chopped walnuts and diced tomatoes and stir. Add rest of the vegetable broth and stir.
Set the Instant Pot to manual and secure the lid on the Instant Pot. Set for 25 minutes. Allow for natural release.
Once the lentil and taco sauce is complete you can top with some cooked brown rice and spinach with the sauce and sprinkle with scallions to create a Lentil and Walnut taco bowl. This also makes a great filling for burritos and tacos.
