Rutabagas make a great side dish, especially if you are looking for an alternative to potatoes.
(Don’t get me wrong, I do love potatoes.)
You may be thinking what is a Rutabaga?
Rutabaga is a root vegetable from the cruciferous family. They can have a similar texture to potatoes but with a stronger flavor. The are high in vitamin c and fiber and are great for weight loss and can be quit filling. Preparing them is similar to making potatoes.
Load the Rutabagas on your plate!
I made these in the Instant Pot but you can also cook them on the stove.
Rutabaga Recipe:
Ingredients:
- 1 Rutabaga
- Salt & Pepper (Optional)
Instant Pot Directions:
Peel and chop the rutabaga into about one inch cubes. 1 cup of water into the Instant pot and use the trivet. Add in the cut up rutabagas. Set the time for 4 minutes with a natural release.
Remove from the Instant Pot. Salt and Pepper to taste. (Salt is optional)
Stove Top Directions:
Bring a pot of water to a boil. Add in the chopped rutabagas. Boil the rutabagas for about 25-30 minuted or until fork tender. Drain the rutabagas and season to taste.
P.S. The rutabagas make great leftovers. You can reheat in the oven and they taste delicious for snack.
