
Chocolate Steel Cut Oat Cookies
The kids and I were in a chocolate mood on recent snow day they had from school. I had made a batch of steel cut oats in the Instant Pot with almond milk and thought what could I do with all these oats?
Let’s make some cookies! Give it a try and see how they turn out. Well… let’s just say they were good… because they were quickly gone quickly.
When you batch cook or meal prep in volume it makes it easier to whip something up whether it is a dessert or dinner.
Here is the recipe:
Chocolate Steel Cut Oat Cookies
Ingredients:

3 cups cooked steel cut oats.

1/4 cup maple syrup (substitute with liquid sweetener)

1/2 cup unsweetened cocoa

1/2 cup almond milk (substitute with you choice of non dairy milk)
Directions:
Preheat the oven 375 degrees. Prepare steel cut oats according to package. Add in oats, maple syrup, cocoa, and milk in a mixing bowl and stir into a batter.
Scoop the mixture into 1-2″ sized cookies on a non-stick baking sheet . Bake in the oven for 15-17 minutes. Remove from the oven and let cool.

Serve and enjoy!

P.S. I batched cooked the steel cut oats in the Instant Pot. I added 2 cups of steel cut oats and 4 cups of almond milk and set the Instant Pot for 4 minutes and did a natural release, Around 20 minutes. You have enough oatmeal for breakfast and to make the cookies for later.
