One of the most dangerous things for me is an open bag of chocolate chips. Who can relate? I also use to love homemade chocolate chip cookies that were all buttery and crispy. The problem was after having a couple cookies I would get headaches from all the sugar and feel miserable from the sugar crash.
These cookies can definitely curb that sweet tooth! These cookies contain no butter, eggs or white flour. What they do contain is pumpkin puree, old fashioned oats, nut butter and some vegan chocolate chips!
Since these cookies have no egg, you can also eat the batter. In fact you don’t even have to bake them. Roll the dough into individual golf sized balls and serve cold. I like to put them in the freezer for about hour and then store in the refrigerator.

….the cookies are loaded with fiber and protein from the oats, pumpkin puree and dates. Benefits of eating high fiber foods is help to regulate blood sugar, lowering cholesterol and can aid in weight loss. Pumpkin which are gourds that is a also good source betacarotene which converts vitamin A and other vitamins and mineral that may help with heart disease and cancer.
Ingredients:
1 can of pumpkin
3 cups old fashioned oats
1 cups of vegan chocolate chips
1/2 cup of date paste
1/4 cup of maple syrup
1/2 cup of nut butter
1/2 teaspoon vanilla
1/2 teaspoon pumpkin spice
optional : 1 tablespoon ground flaxseed or chia seeds
Directions:
Preheat oven to 375 Degrees.
Add all the ingredients in a bowl and mix.
Make golf size balls with the mixture. On a cookie sheet line with parchment paper. Add the cookie ball to the sheet and press to be flatten like a cookie with a fork or your palm. Bake in the oven 8-10 minutes. Remove from oven and cool.
As an option, the cookie balls can be chilled in the freezer for an hour and store in the refrigerator to eat without baking.
