It’s cold outside!
I decided to make some soup in the Instant Pot. This soup is made with a few basic ingredients. Onions, carrots, celery, greens, Butter Beans (Lima Beans) and Israeli Couscous.
I sautéed the veggies in a little water instead of oil. Important to have a hot pan when not using oil so the veggies won’t stick, and to stir.
Then, I pre-cooked the dry lima beans in the Instant Pot. Also, you can use canned beans. Both Delicious!
I used Israeli Couscous or pearl couscous in the soup for some texture. The Israeli couscous holds its texture in the soup. Regular couscous is smaller round grains made from wheat or semolina. Israeli or Pear Couscous is large forms of semolina (wheat).
If you would like to go gluten free you can substitute for gluten free pasta, or just omit completely and add in more beans.
Butter Bean Soup with Israeli Couscous Recipe
Ingredients:
1 onion chopped
2 cups of Butter Beans (Lima Bean) or 1 Can of Beans
3 carrots chopped
3 stalks celery chopped
1 15 oz can diced tomatoes
6 cup water
1 tsp dried basil
1 cup Israeli Couscous.
2 cup greens (spinach, swiss chard, whatever you have on hand)
Salt & pepper (optional)
Directions:
Set the Instant Pot to Sauté. Add in the onions, celery, and carrots. Add in 1/4 cup or less of water to the Instant Pot and stir. Let sauté for 5-6 minutes until the veggies soften. Stir regularly. Add in diced tomatoes, butter beans, water, greens, and basil. Stir.
Add the lid to the Instant Pot and manually set the timer for 15 Minutes. Natural release for the pressure.
Once done add in Israeli Couscous. Manually set time for 5 minutes. Natural release for the pressure.

P.S. Easily substitute the greens and the beans for your favorites and switch up the Israeli couscous for different pasta or add in quinoa instead to create a different soup or to cook with what you have on hand at the time.
Also, if you don’t have an Instant Pot or pressure cooker, no worries! Create this soup on the stove in a large pot. It’s just as good but just a little more stirring of the soup.
